- 2 tbsp. extra-virgin olive oil
- 1 piece onion, minced
- 2 pieces garlic cloves, minced
- 1 piece jalapeño, seeded and minced
- 1 pound spinach (thawed if frozen)
- 1 tsp. dried cumin
- ¾ tsp. coriander
- Salt and freshly ground black pepper
- 2 tbsp. harissa
- ½ cup vegetable broth
- 8 pieces large eggs
- Chopped fresh parsley, as needed for serving
- Chopped fresh cilantro, as needed for serving
- Red-pepper flakes, as needed for serving
Instructions
- Preheat the oven to 350°F.
- In a large, oven-safe skillet, heat the olive oil over medium heat. Add the onion and sauté until tender, 4 to 5 minutes. Add the garlic and jalapeño, then sauté until fragrant, 1 minute more.
- Stir in the spinach and cook until fully wilted if using fresh, 4 to 5 minutes, or until heated through if thawed from frozen, 1 to 2 minutes.
- Season with cumin, coriander, salt, pepper and harissa. Cook for about 1 minute, until fragrant.
- Transfer the mixture to the bowl of a food processor or a blender and puree until coarse. Add the broth and puree until thick and smooth.
- Wipe out the skillet and grease it with nonstick cooking spray. Pour the spinach mixture back into the pan and use a wooden spoon to make eight circular wells.
- Gently crack the eggs into the wells. Transfer the skillet to the oven and cook until the egg whites are fully set, but the yolks are still a little bit jiggly, 20 to 25 minutes.
- Sprinkle the shakshuka with parsley, cilantro and red-pepper flakes, to taste. Serve immediately.

2. Waffle Bread Pudding
Ingredients
- 2 tbsp. unsalted butter, at room temperature
- 15 pieces frozen waffles, thawed and cut into quarters
- 2 cups berries (we like a mixture of raspberries and blackberries)
- 6 pieces eggs
- 2 cups half-and-half
- ½ cup maple syrup
- ¼ cup brown sugar
- ½ cup sugar
- ½ tsp. ground cinnamon
- 1 tsp. pure vanilla extract
Instructions
- Preheat the oven to 350°F. Grease a large casserole dish with the soft butter.
- Arrange the waffles and berries in the prepared casserole dish.
- In a large bowl, whisk the eggs with the half-and-half, maple syrup, sugar, cinnamon and vanilla extract to combine.
- Pour the egg custard evenly over the waffles. Press any waffles that are exposed at the surface down into the custard. Let sit for 15 minutes to allow the waffles to absorb the custard.
- 5. Bake until the custard is set and the surface is golden brown, 20 to 25 minutes. Serve warm, immediately.

3. Watercress, Strawberry, and Toasted-Sesame Salad
Ingredients
- 2 tbsp. sesame seeds
- 2 tbsp. extra-virgin olive oil
- 1 tbsp. sherry vinegar
- Kosher salt and freshly ground pepper
- 4 cups lightly packed watercress, tough stems removed
- 2 cups sliced strawberries (8 ounces)
- ¼ cup roasted tamari or salted almonds, coarsely chopped
- 3 ounces feta, crumbled (3/4 cup)
Instructions
- Toast sesame seeds in a small skillet over medium-high heat, shaking frequently, until fragrant and golden brown, 1 to 2 minutes. Transfer to a plate; let cool.
- Meanwhile, whisk together oil and vinegar in a large bowl.

- Transfer baking sheet to oven, and bake until pastry is puffed and golden brown, 15 to 20 minutes. Remove from the oven, and cover the center evenly with chocolate. Drizzle with honey, and sprinkle with salt.
- Return to the oven, and bake until chocolate melts, about 2 minutes. Sprinkle with almonds, and cut into 4 squares. Serve with ice cream if desired, and drizzle with more honey.

- Set oven racks in middle and upper positions. Preheat the oven to 450°F. Place mushrooms and bacon on a rimmed baking sheet.
- Place on top rack in the oven while preheating, and roast, stirring once, until mushrooms are golden brown, 25 to 30 minutes. Place a 10-inch cast-iron skillet on the middle rack and heat for 15 minutes.
- Place eggs and garlic in a blender. Process on high until frothy, 45 seconds. With blender running, gradually add milk and 2 tablespoons butter; stop blender. Add flour, cornstarch, and 1/4 teaspoon salt; process 1 minute. Fold in thyme.
- Carefully add remaining tablespoon butter to the heated skillet and swirl to coat. Immediately add batter. Bake until golden brown and puffed, 14 to 16 minutes. Sprinkle with cheese and bake until melted, 3 to 5 minutes.
- Top with mushroom mixture, scallions, and parsley.

Ingredients
- 3 tbsp. fresh lemon juice
- 3 tbsp. olive oil
- 2 tsp. pure honey

Ingredients
- 1 cup all-purpose flour, spooned and leveled
- 12 tbsp. (1 1/2 sticks) cold unsalted butter, cut into pieces
- ½ cup plus 1 tablespoon, sugar, divided
- ¼ cup 1/4 toasted almonds, roughly chopped
- 1 ½ cup old-fashioned rolled oats, divided
- ½ tsp. baking soda
- ½ tsp. kosher salt
- 2 pieces (6-ounce) containers fresh raspberries
Instructions
- Preheat the oven to 375°F. Line an 8-inch-square baking pan with parchment paper, leaving a 1-inch overhang on two sides.
- Pulse together flour, butter, and 1/2 cup sugar in a food processor until a sandy texture forms, 10 to 12 times. Transfer 1/3 cup to a bowl, and fold in almonds and 1/2 cup oats. Squeeze together to form small clumps; chill.
- Add baking soda, salt, and remaining 1 cup oats to the mixture in the food processor. Pulse until incorporated, 12 to 15 times. Press into the bottom of the prepared pan. Bake until golden brown, 14 to 16 minutes.
- Mash together 1 container of raspberries and remaining tablespoon sugar in a bowl. Spread over the prebaked crust. Scatter remaining container raspberries and chilled crumb mixture on top.
- Bake until golden brown, 40 to 45 minutes. Cool in pan for 30 minutes, then use overhang to transfer to a wire rack to cool completely.
